Requirements
Heat oven to 150ºC (145ºC fan oven), 300ºF, Gas Mark 2.
Recipe: 2lb loaf tin, greased and lined: 340g (12oz) of mixed fruit,
170g (6oz) soft brown sugar, 110g (4oz) soft margarine, 2 eggs, 170g (6oz) SR flour,
pinch of cinnamon (optional), glacé cherries, pinch of salt,
flaked almonds and cherries or other fruit and nuts for decorating.
Method: Place mixed fruit in a large saucepan. Cover with water and bring to the boil
and simmer for 5 minutes. Strain hot fruit through colander and return to pan (discard
liquid). Add sugar and margarine while fruit still warm, mix well until melted.
Add glacé cherries and the eggs: mix well and add flour and cinnamon, mix carefully.
Pour into lined loaf tin, decorate top with assorted fruit and nuts;
bake approximately 1 hr 50 minutes till done.
